I must suggest that you take away the science and slow down. 'Sun dried' tomatoes...the answer is in the name. sprinkle with something to help absorb and dissipate moisture - salt, celery salt, ...whatever... and keep the flies off for 5-10 days. they will look and taste better. use cheese cloth or a cake cover or something. or your window sill if you have no insect problems. trust nature. trust God. trust mother earth. trust evolution. trust whatever you want to trust. don't fight time. wait for the good outcome. you will not be disappointed.

Hi paperseedblog,

You are right about the dehydrator being a lucky find! I love it. I felt too guilty not to do something with my produce. But, I wasn't feeling like tackling canning. Next year, maybe.

In the meantime, I LIKE having dried tomatoes on hand.

Hi Jackie,

Our farm is located in a section of northern Indiana that is mostly Mennonite and Amish. Almost anything and everything from flowers & gardening supplies to A.K.C. registered puppies, to fresh eggs, to vegetables to fresh butchered beef to handmade furniture and cabinets to vitamins or fabrics can be bought from one of our neighbors. Many of the neighboring farms have handwritten signs by the road advertising their home business.

What a great blog - I really enjoyed reading here. And the recipes look great. I dried some tomatoes in the oven - took FOREVER - but they are in the freezer and I'll appreciate them this winter.

Sounds like you have a wonderful life there on the farm. But WHERE is the farm? I couldn't figure out where you were located - maybe didn't read far enough back - and will do that when I have time.

A lucky find, that dehydrator. I wish I had one. Instead we roasted several batches of our garden romas straight in the oven. They don't get as firm as delicious sun-dried, but the flavor is still sweet and wonderful.
